The Bakery
After four years at Chicago farmers markets, we are opening our first brick-and-mortar location in Lincoln Park in September. Located at 2318 N Clark Street - the heart of Lincoln Park.
The bakery will serve artisan sourdough breads, flaky pastries, hearty bagel sandwiches, and espresso based drinks.

About Dorothy
Dorothy's Story
Dorothy's is owned by Brian Bruns. This bakery is a tribute to his grandmother, Dorothy. From a young age, Dorothy allowed Brian to play and experiment in the kitchen. She didn't use the word "no" when they cooked and baked together, which opened a world of creativity for Brian. It is what drew him to the culinary arts.
Dorothy’s Bakery is named in honor of Brian’s grandmother, Dorothy, who inspired and encouraged his love for baking. A constant source of warmth and light in his life, Dorothy’s influence continues to shape the spirit of the bakery. The new space is dedicated to her — designed to feel welcoming, bright, and filled with the same care she shared in her own kitchen.

Quality Ingredients
Simple and quality ingredients make our products special. Here are the organic ingredients in each of our core bread products:
* All of our breads are made with our own starter. A small amount of yeast is used in the bagels.
Miche Sourdough: Bread flour, whole wheat flour, water, salt
Polenta Sourdough: Bread flour, whole wheat flour, blue corn polenta, water, salt
Black Rye Sourdough: Bread flour, rye flour, whole wheat flour, water, molasses, brown sugar, salt, fennel, Annise, caraway, sesame, poppy
Focaccia: Bread flour, olive oil, water, salt (rotating ingredients such as garlic, tomato, herbs, cheese)
English Muffin: Bread flour, oil, water, salt, clarified butter
Bagels: Bread flour, water, oil, molasses, salt, yeast
